Fitness Week Recipe Revealed: Beetroot Patties

Fitness Week starts on Saturday and we cannot wait to turn up the heat Surf Maroc style. We’ve got a great week in store for our get-fit-guests with daily Surf Coaching and unlimited yoga classes including yoga workshops and Broga classes taught by the Founder Matt Miller. It’s making us sweat just thinking about it!

To help fuel everybody for the week, we’re coming up with a delicious and nutritious menu that’ll satisfy well-deserved appetites. And here’s just one contender for the menu – our amazing Beetroot Patties. Using fresh and locally resourced ingredients these vegan patties are a favourite on our tables! Loaded with detoxifying and stamina building beetroot, protein-rich sesame seeds and immune boosting spices, they’re perfect for our Fitness Week menu!

 

INGREDIENTS

 
Patties
3 large Cooked beetroot
3 teaspoons Plain flour
3 teaspoons Semolina flour
2 teaspoons Sesame seeds
1/2 teaspoon Clove powder
1/2 teaspoon Aniseed
1/2 teaspoon Cinnamon powder
Salt
Pepper
Olive oil

Sauce
100g Natural yoghurt (can be vegan or dairy)
Half a Cucumber
1 bunch of Fresh mint

 

METHOD

Peel and grate the beetroot and add all spices.
Mash together with your hands to let the mixture lose excess liquid and become soft.
Add a little bit of flour.
Mix to form a dough.
Once the mixture is ready, form into small balls.  Sprinkle with sesame seeds on top of the balls.  Place the balls into semolina flour.
Lightly fry the patties in vegetable oil.
To prepare the sauce, finely chop cucumber and mint and add to natural yoghurt.
Serve on top of green salad leaves.
